Have you tried...parrying him?

You can chain parry Gwyn and use the counter attacks to kill him real quick like ....

vanchann: The approach which had been worked for me, was my best armor combined with stone-skin spell. Healing is necessary too.

The hard part was to cast stone-skin for a second time during the fight. It should be immediately after the effect of the first stone-skin expires.
I think Havel's Greatshield will allow for two Stoneskin casts before breaking down if you use it when its durability is at max. I think it also has a faster animation. AFAIK, you can have it as an alternate shield and not have its weight slow your roll...
