I have a backlog of GOG games a mile long that I have never played before! Not to make it sound like "work", but I would love to get one finished ASAP.

So, my question: which GOG games are the shortest/quickest to finish?

Beneath A Steel Sky is pretty short. The first Fallout and MDK are, too.
Neighbors from hell is a quick, easy and entertaining game. Well, both of them, since the sequel is bundled.
Depends on your preferences and enthusiasm for the games, I guess. Of the ones I know, Enclave seems to be pretty quick and short, while holding some replay value. I haven't played through it yet - still in the Light campaign - but it seems I'm already nearing halftime after just a couple of quick runs. Also, the story isn't all that important, if it's your type of game you can have fun playing levels independently of progression, and most levels are pretty short runs (5-20 minutes, I'd say). I'm playing on Easy mode though, could be more frustrating and slow on the harder difficulties.

If you like adventure games, Sanitarium is nice because it consists of several short story chapters instead of being an epic tale. I managed to play through it, tackling one chapter per evening.

And I second swizzle66's suggestion, MDK seems pretty short, maybe just a few hours.

I was going to suggest these games.
Lure of the Temptress, Phantasmagoria 2, Postal and Postal 2, uhhh... hmmm.
You can play through Evil Genius in about 2 days if you pace it. Though, if you've never played it before, it would probably take you about 4.

Also, I found Broken Sword 2 to be very short, even to the point of finding it disappointing. It took me 2 evenings and I used a walkthrough twice.
Not sure if you did get my recommendation the other day but Gorky 17 is quite short. In Cold Blood is also quite short.
Amerzone and Shogo are pretty short; around 6 hours or so.
FlatOut can be done in less than a day.
Giants: Citizen Kabuto can go pretty fast and is a very underrated gem. I'd also put Fallout in the mix (as someone else mentioned), it can be a very quick playthrough (but you can always replay later and make a different kind of character).
runaway can be finished fast and has a good story too
Another World - can be finished in, let's say 10h
