I used to game almost solely in fullscreen mode. Mostly for more immersion and, of course, more screen real estate. Recently, however, I've taken to gaming in windowed much more. The main reason is because of dual monitors.
1) Old games seem to not be fans of dual monitors, I semi-regularly get crashes that are fixed by turning off one monitor... or running the game in windowed mode.
2) It's easier to switch between programs. I usually have at least Google Chrome or open at the same time as playing (often more), and like to switch back and forth between the two. Fullscreen often causes problems for this, minimizing the game when Alt-tabbing and possibly even causing crashes, while windowed works without issues.

I used to wonder why anyone would use windowed, but now I see its definitely got some benefits. Now I'm wondering what other people use most often. Fullscreen? Windowed? A mix of both?
Borderless window full screen.best of both worlds.
It depends.

If I'm playing a game just to enjoy it, I use Full screen.
When I'm reviewing a game, I use Windowed, so I can take notes and write the Walkthrough for the game as well.
Pretty much fullscreen always. In the past the only reason I'd occasionally use windowed mode would be to allow for using a third party map or mapping program. But these days I just use my tablet on a stand as a second screen for anything like maps, so playing widowed is pretty rare.

I always go full screen with desktop resolution whenever it's possible
I recently had to start using solely borderless window. My new monitor has terrible default gamma and most games ignore gamma correction when run in fulscreen.

Before that, it was fulscreen 99% of the time.

I agree. Fullscreen mode gives a better experience.
Never used window mode,well that I can remember and always toggle fullscreen.
You get less performance in window mode, so exclusive full screen for me.
Depends. If I'm just messing around or in a game where it doesn't really need constant attention I tend to window rather than tabbing in/out constantly.

If it's something I'm focused on or want to feel immersed in I go fullscreen.
I mostly use windowed mode as it give me easier option to access other pc apps like internet browser to search some more info (today's games are lacking a lot in documentation and mostly have no manual).
Definitely full screen mode. I can't even remember when was the last time I played differently. Maybe some AGS game?
It's always fullscreen for me. I hadn't really given it a thought, so it's great to read other people's reasons to use windowed.
Fullscreen where possible. Borderless Windowed if I have problems with ALT-TABbing.
