I asked GOG support to reset Galaxy cloud statistics (achievements, tracked game-time) for my account, received the following response:
I'm afraid that right now we don't have technical possibilities to delete or reset your Galaxy in-game statistics.

I apologize for these limitations.
I know that data is only recorded when the client is running, but I've accidentally left Galaxy on on several occasions. I can't really remove the program as it is mandatory for online functionality in some games.
