How do you turn off the Auto update of GOG Galaxy?
I hope I am mistaken here, but it appears at some point the option to postpone Galaxy's update has been removed.
You will have the latest and greatest version, whether you want to or not! /sarcasm
You can turn off auto update for games if that's what you're after?

Settings -> Game Features: Untick "Auto update games"
1. Make sure GOG Galaxy isn't running.
2. Start File Explorer. In the address bar, go to %AllUsersProfile%\GOG.com\Galaxy\redists\
3. Rename GalaxyUpdater.exe to something else, like GalaxyUpdater.exe-disabled

If GOG Galaxy has already determined an update is available, it may be applied eventually, no matter how many times you press "Update later". I don't know where pending application updates are stored.
There's a /runWithoutUpdating command line switch, or at any rate there was; I haven't tried recent versions.

A small update and correction on my part:
You can still choose whether you want to postpone a Galaxy update. No need to fiddle with the command line.

Except the next time you launch the Galaxy client, it will update itself automatically without asking again...

The best way to turn off the galaxy client updates, is to uninstall the galaxy client.
You don't need it to access your games.

Bring up the galaxy launch page for the game. Click the button to the right of the Play and Synch buttons. Choose "Manage Installation" and then choose "Configure..." and then uncheck "automatic updates to newest version."

GOG Galaxy is a game launcher/dl'er CLIENT program/software/application. The CLIENT can be installed on a pc, -without- even one game in the library. Until ChWooly says otherwise, its clear to me that ChWooly wants to put a stop to updates to that Client program.

"VanishedOne" and "apfelnymous" posted the best answers so far to restrict the CLIENT update process. however. "apfelnymous" posed a in-CLIENT answer relating to a global setting. Without illustrating a settings path to said option. And thus i have failed to find said setting (though i would very much like to.) my version of GoG Galaxy CLIENT is 2.0.73. There in all i could locate was options for disable GAME updates. Not CLIENT updates.

For Clarity, could someone who is able to access the option "apfelnymous" spoke of, post a textual or image based path of settings, to access said option? (a mock up might look like the following: Settings > Notifications > ClientUpdates > ☐Allow_GoG-Galaxy-Client_Updates☑ as a fictional example only)
I dont like forced updates too. Steam and other ckients are terribke too. Iwant client just for downloads, dont need usekeess features or enshitification of already good ones.
