I'd like to have a link to a list of games on my account, that I could give to others.

On Steam this is provided in e.g. https://steamcommunity.com/id/lietu/games/?tab=all and I'd like to have something similar for GoG. I live stream regularly, and it would help my community if they knew what games I have when they give ideas or requests for what I would play next. Since I have a fairly sizable library on GoG as well I'd like to be able to link that to my viewers.

Is there a way to get a link to the games I own on GoG, i.e. something I don't have to manually update when I purchase new stuff? It should not require being logged in, as I need it to share with other people, not for myself. At the moment I keep a separate Google Doc, which is always some months outdated as I forget to update it every time I make purchases.

No official way (yet?), but you could use Barefoot Essentials to get a GOGWiki link you can share, like [url=https://gogwiki.com/wiki/User:JMich]this one[/url]. You'd still need to manually update it though (couple of clicks, nothing too fancy), and I'm not sure what the current state of new registrations on the wiki is like.

I imagine public profiles will be coming sometime yet this year, now that Galaxy will be officially out of beta soon. But no, there's no current way to display your library or whatever apart from screenshots or third-party software/websites.

The wiki is the best way for the moment, until GOG add a way to share libraries like they currently do for wishlists. I see that the wiki server is currently having some issues with letting you register yourself, so you can instead send me a private message and I'll create a wiki account for you.
