It's Linux. Anywhere you want, as long as you have the required rights.
You're a fan of /opt? Put them there. I prefer a Games folder in my ~, but I'm a lazy person, too lazy for softlinks to anywhere else.
Edit: More than two years later and still no Galaxy for Linux...
