Last month I played Mafia Definitive Edition and completed the entire campaign but I didn't get any achievements and before that I played Tomb Raider GOTY and I made a lot of progress and all I got was an achievement that I should have received before. Does anyone also have this problem and know how to fix it?

I'm not aware of a widespread problem, but at least one other user reported problems unlocking achievements. You can try the aforementioned thread to see if anyone came up with any solutions.

If they don't work in any game, one thing to check is to make sure the game executable has Internet access. There are sometimes several executables under the game installation folder. "Achievements" must also be enabled in GOG Galaxy Settings - Game Features. Martial Law is a short free game that can be used for testing purposes.
