HereForTheBeer: For me, the top was Battlefield 1942. That introduction to 32- and 64-player online FPS on the Wake Island map was a revelation.

Spectre: Funnily enough the demo for that put me off the game as it didn't run that great on my PC and seemed it wasn't as good as similar games of that time like Operation Flashpoint.
Operation: Flashpoint... another great game. Never tried it online, though. Both of these titles have sucked up many many hours of my gaming time over the years.
Heretic, Doom, Duke Nukem 1, Screamer.

I loved the Wolfenstein 3d shareware so much that I ordered the full version by mail back then. Plus the strategy guide. I still have the floppy disks and the book. No idea why I still keep them for all these years.

Traffic Department 2192. The story was quite interesting for its time with the trash talking female protagonist.

Dessimu: Desperados: Wanted Dead or Alive. From Kellog's box
Interesting, I also got that demo from a Kellogg's box, thought they only did this in Germany. What's hilarious, they replaced every mention of "Wanted Dead or Alive" with "Ein Wild West Abenteuer" ("A Wild West adventure") there. I guess they didn't consider the original tagline suitable for a game included with a cereal box.
Does Shareware go under demo?
If yes, Doom and Wolf3D, Cmdr Keen
