marees: A lot of this is over my head, but from what I can follow, you're saying that GOG is using a different compression method for faster install times. Is that a fair summary? And have any of you actually verified this? Not their motives, I mean, but that they have in fact switched to a different method.
yes that is correct and yes that has been confirmed both by users and GOG.

( I don't recall if GOG ever directly stated in how far "faster install times" was part of their motivation. Their main goal, in so far as I understood, was to streamline their building pipeline to be able to push out installers/updates faster, ie to make things faster on their end )

I suppose since my question's basically been answered, I should identify a post to mark as the "solution". I wish I could mark more than one, since there were several different people who contributed part of the answer, but I don't think that's possible. So I just want to say thanks to everyone who gave useful information.
