I think the Baldur's Gate RPGs may apply, since you can always pause the game and it runs well enough in windowed mode on my PC.

Also, for sheer awesome, the Jagged Alliance games would also probably suit you right down to the ground.

Um. Strong recommendation for Incubation in the Battle Isle pack. If you liked XCOM, you should like Incubation. If you've never tried XCOM, for heaven's sake go and get it from somewhere. No, it's not a GOG game, but this is one of those titles I feel obligated to recommend even if we don't have it.
