Wishbone: You are going to get so many recommendations they'll be more or less useless, just saying. However, here are a few of mine:

Giants: Citizen Kabuto (1st/3rd person shooter with over-the-top humor)

Heroes of Might and Magic 2 (TBS)
Settlers 2 (RTS/Simulation)
Sanitarium (Adventure)
Hostile Waters: Antaeus Rising (RTS)
Unreal Tournament 2004 (FPS)

No idea. If anything adding a "U" should be a UK thing.
There is a distinct lack of Psychonauts being mentioned in this thread.
There aren't any; everybody is going to have their own tastes, and nothing, be it game, music, art, movie, or anything else is going to appeal to everyone. But since you ask for them, here are some (useless) recommendations:

Planescape Torment -- Great story, writing, and characters. Everything else, not so much.

Broken Sword: Director's Cut -- in my opinion, the cream of the crop, point-and-click wise (a lot of people talk up Gabriel Knight, but [urlhttp://www.oldmanmurray.com/features/77.html=don't be fooled][/url]).

Legacy of Kain: Soul Reaver -- wonderful dark action/adventure thing. If you like it, there are sequels, also on GOG.

Thief -- kind of surprised nobody else has mentioned it; wonderfully tense stealth game (edit: now someone has)

Deus Ex -- one of the great classics of PC gaming

Fallout -- again, a major classic of PC gaming, in the RPG genre this time

Lot's of other games I love, but since you won't give us a hint about what you like, I'll leave you with those recommendations, all acknowledged classics that have stood the test of time (of the six of them, I myself only played Soul Reaver growing up, so whether you like the games or not, I can at least guarantee that the games on my list are there on what I believe are their merits, rather than nostalgia).

edit: Ralackk is right, I forgot Psychonauts. Shame on me. I did play that one growing up, on the PS2, but I really feel that it deserves to be mentioned on its own merits, even if the uninspired controls and weird difficulty curve bring it down a little.

You get a boomerang machete that you can use to butcher people in ways you couldn't even imagine in the original. That's just the main highlight, but not the only one. Also, you get to kill Gary Coleman over and over and over again, which is always a good thing.

please don't, go with your first instincts. It is really one of the most horrible games ever made - it do not have a single redeeming feature. I do not say so often, but this is really one of the very few games which should be left to history as and example of how to not do things...

This is interesting, and pretty much how I feel. I've been on GoG for a time now but haven't really been into it (I originally only made an account to get Painkiller, also a must play, at a good price w/no DRM) Now I'm really looking at these games I haven't played but want to get into, like where do I start?

I've found it can be anywhere. Those of us more used to modern games have to broaden our minds a bit when playing games like these, but I've found once you get past the odd interfaces, there's a wealth of entertainment to be had in most games here.

My advice? Pick a game that looks interesting, not just looks good, but looks interesting. Then read a few reviews to see if it's good quality or if there's a better version, then just try it. You will rarely be disappointed.

The multiplayer is pretty good on it though. And as Licurg said, there's Gary Coleman, although i wouldn't say that murdering/butchering people over and over for fun is a good thing. But thats just me.

that was fun - and it was not broken. Postal was satirical, Postal 2 is just braindead. The mechanics in Postal 2 are just not good at all, so bad game + bad story.

I don't know - when the highpoint of a game is "*giggle* you can pee on people *giggle*" and think it make up for everything else, then go ahead.
