hedwards: I'll eat just about anything. I remember a few time eating things that weren't likely to be edible. Going through a period of serious starvation tends to open ones mind to delicacies that other cultures like.
The only ingredient I see there that's at all questionable is rye, and as long as you get it from a reliable source, it's not bad. If you're not careful you can get sick for ergot contamination. Around here it's a challenge to get.
It's the opposite here really. Probably around one third or more of baked breads sold here are rye based and while less often (compared to say wheat) used in home cooking/baking I'm sure I could probably easily find rye flour in most food selling stores here.
I've never heard of flour of dubious quality sold anywhere in my country so here all flours are pretty clean and safe. Probably thanks to strict foodstuff regulations and resulting high sanitation reguirements on all fields of food production. I never had even heard of 'ergot' or 'torajyvä' as it seem to be called here before you mentioned it. Apparently it killed thousands in the 19th century here. You learn new things every day :-p
