Anachronox type of humour is leaning toward crude, juvenile and random. I didn't find it funny after 30 minutes. I'm sure there are others with better, intelligent humour.
The Bard's Tale and Anachronox have already been mentioned.

There's also Costume Quest (adventurish) and DROD trilogy (more of a puzzle game)

Icewind Dale? I don't know. It makes me laugh when I mess with it a little bit. In fact, any game can be funny once you think about it. It's entirely up to you how to make something hilarious. For example, trolling. Etc. Stuff like that, I guess.

Icewind dale 2 (I think? the one where you first defent a village against goblins) can be quite funny when you play an evil group.

D-ROCK reminds me, not him his avatar. The Freedom Force games are hilarious though they aren't really RPG.
