Depends on the game. For games that are run in DOSBox, you can press Alt-Enter to switch to windowed mode.
Welcome!

As drennan says, it depends very much on which games, but it's possible that it's simply that it's an old game and just low resolution because of its age.
thnx guyz i will try that i will look for a newish game to buy and see if there is any difference :) it was theme hospital and a couple of the free one you get when u join, i'll have a look now for a newer game..... once again thank you for ur help.. amd love the site :)

Before you do that, I might be able to help!

Theme Hospital does have a super low res mode which you might be stuck on by accident. Does it look the same when you play it as it does in the screenshots in the store page?

Ohh! That's just what the menu looks like, I had the game when I was about 10 and it always looked like that AFAIK. Once you start playing it should be nice and sharp (as sharp as can be expected for a 16 year old game ;) ).

Good choice of game by the way. :D

For Dosbox I always found the best settings to be:

fullresolution=desktop
aspect=true
scaler=normal3x

You can find these asettings in the .conf file in the game's directory.

Modern LCD monitors do an abysmal job at displaying low resolutions and so if you want to play fullscreen it is important to set the resolution to the monitor's native resolution, which unfortunately GOG never does for its DOS games.

Actually, GOG has started doing that. That was the cause of another recent help thread (user didn't like the fact that the game was now pillarboxed and wanted to go back the the abysmal scaling).

It'll be called <something but I'm not sure what>.conf, so look out for the .conf bit.
