Hi. I just now joined GOG to download Dungeon Keeper 1 & 2 for myself, but I would like to know if I could play it as well as my parents who had original copies of both games (which I lost somewhere). Is it something that can be discussed with a GOG team member or can I simply give them the installer?

Well, you can but no you are not supposed to do that. It's your call though in reality. Considering what you said about them already having bought it once I can only tell you that if it were me, I would not care about the rules. I would do what I felt was reasonable and fair enough.

Technically, it's against the ToS . Practically, no one can stop you. My advice would be to tell your relatives to each get their account, and buy it for themselves if they afford to . If you can't -then go for it, it's not gonna kill anybody... but at least overcompensate by buying more games ;) I recommend you start with Sacrifice, which is one of the most underrated games ever made....
From the Downloads and Games section of the FAQ:

"We do not limit the number of installations or reinstallations, as long as you install your purchased games on computers in your household."

If you live with your parents, you're safely within GOG's terms.

For friends or relatives who don't live with you, they should have their own paid-for copies.

This is on the honor system, so do the right thing.

I usually install games that have multiplayer over all my computers so i can play them with my friends when they come to my house... however i do not give them the gog installers...if they want them, they can always buy them here ^^
