I would like to make a second gift to a friend, but I am not sure of the email address I used the first time.

I saw the list of the gifts, but there is only the GOG-name.

Is there a way to get the email address of the persons I sent a gift?

Check the e-mail you got, titled "This is your gifted game summary (many numbers here)" (or "gifted order summary"). It tells you what e-mail address you sent it to.
