A 'freebie' ticket for any one person she chooses.
How about signing up for something you can do together, like dancing or pottery classes? If there's an artistic or other type of hobby she's been meaning to try, you can do it together. That way it's a thoughtful gift and you can use it to build your relationship.
Find something, or better yet, build something unique that meets a particular interest of your significant other. Not just anything anyone could grab off the shelf. As an example, I saw a video of a guy who handmade a themed Monopoly set for this girlfriend, which was for a film series she loves, but which has not been produced yet by the company that puts that board game out.
Most women love really slick things that will make their friends jealous. It needs to be something they can naturally bring attention to and show off, that is why jewelery is usually recommended. Because of this you'll never go wrong with an iPod, iPhone or iPad.

I recommend some nice flowers and your credit card to use the whole day.
I gave my ex a musical box sculpture depicting a scene from one of her favorite musicals. When we split, it's the only thing I'd given to her that she wanted to keep.

Now I'd probably buy a few mystery boxes. You basically have no idea what you're giving to her, so it's a fun surprise for both of you.

You get the mystery boxes at a place called The Something Store I believe.
Thank you everyone for the suggestions. I liked Hohiro's picture album idea because it seemed more sentimental so marked his suggestion the winner and sent a PM.

I ended up going with tickets to a Sarah McLachlan concert and an assortment of teas/coffees from different regions of the world. Luckily Sarah McLachlan just started a US tour and my wife is a fan so that was convenient.

I really appreciate the input.

Edit: I think someone mentioned cutting out the inside of books to make a unique packaging in a hidden compartment, that was a fun idea I tried but didn't pull off very well (it seemed a good hiding mechanism for concern tickets.
