I have a Windows 7 box and a Mac. If I buy a game that is available for both platforms, can I install it on both? Or will I have to buy it twice?

From GOG, I take it? ;-) No, you pay once for the game and you can install it on whatever machines you own as long as the OS is supported. One of the benefits of DRM-free-dom.

If you mean from GOG, yes you get both. Just make sure to select the right one when you download.
