Never did understand why they backtracked on that one. Personally. I reckon it's because Dawn of War gave them red blood by mistake, so they just quietly changed it in the next codex update. Funnily enough, it seems that they are now strongly in the plants category for WHFB going by the fluff in the new 8th edition rulebook.
But I do agree, to have any argument about the originality of Fantasy/Sci-Fi staples is moot at this point. They all draw inspiration from each other.

Maybe it's a fungus that consumes and uses a lot of iron? Ferrous oxide would make a reddish color, and it also might help to sort of explain why they're so unnaturally tough.

Chances are Relic did it for the same reason GW does it now.
"Most Orkz" are green. They had green blood. Can you see how that might have been seen as a bit bland? :p
Admittedly, Orkz don't walk around naked (usually :p) so it wasn't as big of a deal, but I suspect it really helped for contrast.
True, I guess artistic license is allowed to play its part in completely made up worlds. :)

orcishgamer: It's not just the gameplay that's so darned similar between WC and Warhammer, the entire art direction and style of the races, especially Orcs/Orks, is so blatantly based on the Warhammer stuff. Some of this was still obvious in WOW years ago when I played it.

Prator: Are you sure that Warhammer was the first to use that style of Orc? I thought both GW and Blizzard were ripping off the even older Dungeons and Dragons tabletop orcs.

The portrait artistic style? No, I'm pretty sure GW did it first. Obviously Tolkien used Orcs in his books (but only his later rewritings, seemingly, everything was goblins at first - he rewrote those stories several times) and D&D and whoever else borrowed from all that.
What I'm talking about is the oversized lower jaw look that they have in both Blizzard and GW material.

Unless my memory fails me miserably, you could select a maximum of 4 units at a time in Warcraft and 9 in Warcraft 2.
