Can't quite order then, but of the mentioned, Outcast, BG&E, Arcanum and Total Annihilation.

I also throw in Advent Rising. I hope I'm not forgetting anything, but I probably am.
I'd say Baldur's Gate II, but the download doesn't include that one battle music variant (hopefully you know the one).
Fallout has the best soundtrack i have ever heard. Truly a masterpiece.
Heroes of Might & Magic 4
Stunning music, I prefer HoMM4 to HoMM3 mainly just because of the music.

Outside of GOG, I'll also pick the Silent Hill series, and the recent indie to the moon also has amazing soundtrack

It has music (besides the intro song)? Damn, clearly I haven't played it long enough yet. I remember hearing mostly just environmental sounds during the game, or maybe there was some problem with my setup.

I can't put my finger on it, but didn't Rainbow Six and/or Ghost Recon have quite good music too?

It has a lot of it, actually. It's heavily inspired by Aphex Twin's Selected Ambient Works Volume 2, and it's great. One of my favourite albums to use as background when working. Ambient music definitely is not for everyone, though.

In no particular order:
Fallout, Planescape: Torment, the Icewind Dales, Giants: Citizen Kabuto (Mark Morgan and Jeremy Soule, you can't go wrong with these two)
Outcast, Fahrenheit (not that second pop crap disc, only the Angelo Badalamenti goodness), Beyond Good & Evil
I love Giants soundtrack it just feels right for the game and is great to listen to outside the game
There's many good soundtracks here, Giants has already be mentioned, as classic RPG's ones.

It's hard to choose because of the variety of styles:

- Messiah: an complete Fear Factory album plus the soundtrack they did for the game? At $6? If you like Fear Factory, you should buy it. Oh, I think it comes with a game…

- Redneck Rampage: two fun country compilations. Lot of songs, lot of banjo.

- Bloodrayne 2: old-school techno music.

A GOG soundtrack guide, with style, author, and so on, would be useful. With the prices here (even more with weekly sales), you don't even have to like the game which comes with the soundtrack.

Fenixp: No mentions of Outcast?

wpegg: No, no-one has mentioned it. Not even Cambrey, I thought he was a shoeing to say that.
He hacked the forums and ninja-edited his post. It said 'Packman' previously.

Cambrey: Outcast.
Right, Cambrey? Riiiight?
That's a tough one, Of the games I bought from GOG maybe:

1. Gothic (by Kai Rosenkranz)
2. Planescape Torment (by Mark Morgan)
3. Beyond Divinity (by Kirill Pokrovsky)

But I also appreciate Fallout, Fahrenheit, Vampire Redemption, Psychonauts, Beyond Good & Evil asnd many others. Besides, I haven't listened to all of them yet and it's often hard to discriminate between the soundtrack and the overall gaming experience and atmosphere because they definitely belong together. If I'd have to judge a soundtrack without playing the game, it would most probably lead to different results than judging the soundtrack of games I'm already familiar with.

Im so much into Age of Wonders OST.

Having hard to time to play the game (modern games made me such a weak gamer:( the music is the only thing that keeps me going.

And it's gets better and better;)

Also my thought - i can't think of ANY good game with bad OST.
Music is much more important than people think;D
For me:
Gothic 2
Planescape Torment
Neverwinter Nights

Armed and Dangerous, the game they made after Giants, had even better music.
