Ok, so basically, as the title states, if you could build your dream humble bundle, what would it be? Keep in mind this is doesn't have to be realistic, you could add stuff like Skyrim and Bioshock Infinite in there if you want (heck, you never know. Civ 5 and Dead Space 3 were in bundles), but try to have some common theme/company going on. So just put your choice of games/products and also what the beat the average would include. And no, these don't have to be on Steam either. I'll go first:

Nmorello11's The Lucas Arts Bundle:

Star Wars Knights of the Old Republic 2

Empire at War

Jedi Knight 2: Jedi Outcast

Star Wars Battlefront

Star Wars The Clone Wars: Republic Heroes

Beat the Average:

Knights of the Old Republic 1

Star Wars Battlefront 2

Lego Star Wars: The Complete Saga

By the way, you guys can repeat bundles with different games if someone has already said your idea

The Monolith FPS Bundle

Blood
Blood 2
Shogo
Aliens vs. Predator 2
Tron 2.0
F.E.A.R.

BTA (Just because NOLF is extra special)
No One Lives Forever
No One Lives Forever 2
Contract J.A.C.K.

Option to give the money to the devs who actually made the games. I don't know if any of them still work there anymore.
A different take on the Lucas Arts bundle idea:

Humble Lucas Arts GOG Debut. Pay what you want for these games that are making their debut at, and get a key to redeem them on GOG.

Base tier:

Day of the Tentacle

The Curse of Monkey Island

Star Wars X-Wing

Star Wars TIE Fighter

Zombies Ate My Neighbors (because why not)

Beat the average:

Grim Fandango

Star Wars X-Wing vs TIE Fighter

Second week unlocks:

Star Wars Dark Forces 1, 2 and Mysteries of the Sith
The Humble D20 Bundle

Pay what you want for:
-Savage Worlds
-Golden Sky Stories
-Mouse Guard
-GURPS Basic Set
-FATE Core (With Worlds on Fire and Worlds in Shadow)

Beat the average:
-Shadowrun 5th Edition
-Runequest 6th Edition
-Traveller Complete Pack

2nd Week Unlock:
-GURPS Fantasy Set
-Toon RPG
-FATE Core Toolkit
-FATE Freeport Companion
-A Pirate's Guide to Freeport

Yeah, it's not videogames, but it certainly is games nonetheless!
Want to add on to my idea: The 2nd week unlock would be one of the Force Unleashed games
