Well, tried NewWolf and sure I can make it look like good old Wolfenstein 3D (apart from the texture blurred HUD) and it has a nice control scheme, but the bugs put me off. I do have the Wolf4SDL installed but I now have another solution that comes very close to what I'm after.
It all came about through messing with Blake Stone which has the same control scheme as it uses the same engine. In the GOG Blake Stone forums I found a reference to a TSR program called novert that disabled the Y-axis on the mouse.
http://www.gog.com/en/forum/blake_stone_series/mouse_config_q I also then used DOSBox's built in key mapper to add the strafe modifier to my chosen left and right keys.
So now I don't get accidental forwards/backwards movement and I can turn with the mouse or strafe with the keyboard. However, there is still no circle strafing as pressing left or right turns on the strafe modifier and turning with the mouse would then just strafe too, but this is still a big improvement. :) Thought I'd share in case anyone else finds this useful.
