Pretty self-explanatory - the instant an NPC dies, their body disappears instantly, or within a couple of seconds. It's kinda immersion-breaking.

Is there a way to stop this? I'm running the game at 60+ FPS on High settings, so I can take a small framerate drop.

Umm, happened in the first one, too. They turned into the bone piles if the had loot, or disappeared if they didn't have any. I can't fathom why this is such a big problem. *shrug* Check if there's a decals stay slider in options, can't remember right now and at work, don't have game here.
Because of the way certain game triggers work, constantly spawning creatures, it could quickly become an unplayable mess if they didn't remove bodies and replace them with their corpse bundles. In other games where once an npc is dead they stay dead, it is fine, but with perma spawns its simply poor design not to remove them. Keeping corpses in the world quickly racks up polygon counts chewing through Gmem, particularly in games where the npcs are highly detailed such as witcher 2.
It would be nice to have an option to leave them there for those with the resources to spare but it's not exactly something I'd give priority to.

I haven't seen it happening 'the instant' a creature/NPC dies... more like 10-15 seconds afterwards. It isn't too terrific an immersion breaker.
I feel very frustrated by the fact bodies disappear actually like 3-5 seconds after being killed, even with a high-specs hardware...

It must be at least an option (slider or something like that) to allow bodies to stay (at least until Gerlat leave the zone, or take some distance from them).

And more annoying, unlike the first game, We cant loot directly on bodies, and have to wait some irritating seconds to get the "magical loot bag" appears.
That is more a atmosphere-killer than other things you can get...

And if the problem is purely "ressources consuming", allow bodies to geometrically (and/or texturely) simplify themselves to free ressources.

But its strange that with systems with over than 4Gb RAM spreading around (6 or 8 Gb is common now in the gamer people), we are not allowed to push up this option...
And actually no way to tweak it in a .xml or .ini file (i searched onto "community.ini" but things are confusing : what settings this file changes ?).
I agree with the OP. It would have been nice if the bodies stayed around a bit longer. I have trouble finding my loot in the high grass, not to mention that it can look pretty awesome when dead bodies are piled around you.

Constant spawning feels like a lame excuse to me, because I think constant spawning is itself pretty lame. Though I suppose there may be circumstances where it's appropriate, but even then, I don't see why the bodies can't stay around a bit longer than this.

Medieval Total War 2 can easily deal with hundreds of soldiers on the screen, and keeps their bodies around after the die. Why would a few bodies be such a problem here? Well, I suppose TW2 has a lot more detail in the scenery: grass, leaves, etc. But in comparison to the huge numbers of polygons already there, do a few bodies really matter that much?

And if the body count gets too high due to constant spawning going wild, you can always remove the oldest bodies at that time, rather than immediately after death. And then please fix the constant spawning.
I don't see the issue.

After a bloodbath with harpies or nekkers, I can scan the battlefield and see nothing but dozens of steaming piles of poo. Kinda tells you visually who won the fight. LOL

And check those poo piles for mutagens. You just may get lucky.
