I'd like to try running the game under high rather than the auto determined medium setting the game opted for after installing the game. Anyway to adjust this and see how it will perform?

You have to adjust graphic settings in the launcher. Its "video and Language". You can adjust to High there. If you need a objective indication of how good its running google FRAPS and run that in the background. If it hovers around 30 FPS most of the time, then you're good on High. Anything lower than that is debatable, but I simply cannot play a game at 20 FPS...Just me though.

There's a box to check for 'Show advanced options', but at least for me the launcher menus bug and the box doesn't normally show, but I can click on it at the left side of the 'Input Settings' field.
Edit: noticed it because it briefly shows when moving mouse cursor around the menus :P

The launcher has an option to customize the graphics.
