Sorry if this has already been asked....

Is there any point to gathering in TW3, besides what you need to initially brew the potions, bombs and oils? I apologize if I've missed something, or maybe I'm not far enough into the game - but it seems like gathering is redundant after a certain point.

I only clear the 1st zone. Right now, I don't really see the point.
You farm for 1 potion, then you just need to meditate to refill them.
So, I guess there is no need to overfarm.

Aye, I think this is most likely the case. Just have to keep playing I guess and see what happens. For now I'll start selling all my ingredient, most of them are easy enough to come by. Save the alcohol and oil bases of course =)
