I thought that is very strange, and I decided to see how guys play in Witcher 3 on YouTube

Hmm....my Gerald stats is very terrible in compare with youtube's Gerald stats.

It may be a bug (or not be). Which stats you have at the end of game (about 34 level)?

P.S I don't use any cheats

Not a clue, that... is confusing, even mine when it was 24 didn't have anywhere near that vit, or sign intensity O.o

Some people report getting inflated stats after self inflicted Dimeritium bomb exposure.

Can't say that I had any such trouble after passing though my clouds, but I guess being in the epicentre might be different.

Yours is definitely wrong though according to the xml template.

Yes, it is a bug.
I found xml values (thanks Lieste), and (if I understood correctly and if I found the correct values) my HP values (I checked only it) is correct only before level 14. From level 15 my HP values greater that it should be

мощь знаков 735% -тебе ниочем не говорит?) у меня на 24ом лвле набирается около 80-90% с учетом багов мутагенов (когда они дают меньше чем должны)
если учесть что горение игни дамажит в % от макс здоровья монста - то ты можешь сбернить вообще что угодно в секунды.
если не хочешь так играть - то либо жди патча (хотя если учест ькак расторопно они фиксят баги - ждать будешь долго) либо сними с себя все мутагены/ умения и пробни отредактировать аткой сейф чтобы у тя было 0% мощи знаков. ну или более простой вариант играй мечником. без знаков =\
