Anime is cool. Especially stuff based on Type-Moon works like Unlimited Blade Works (the recent series not the shitty movie) and Kara no Kyoukai. Also the "monogatari" series (Bakemonogatari, Nisemonogatari) is also great. That said the majority of anime (as with the majority of anything) is samey low-budget crap.

If you like manga, read everything by Tsutomu Nihei, he is the master of Japanese cyberpunk. Amazing artist.

Open endings are primarily due to the fact that most anime are adapted from manga or light novels which is in most cases haven't ended yet, so they can't "end" the an anime series without completely going against the source material.
