Judging from what you've listed, you might like Dragon's Dogma.

I was thinking about getting that actually, I havn't even played the other games so I may give them a try. I have a tendency to only really focus on the RPGs that I love like Dark Souls, BOF3, Borderlands and TES...although my love for TES has dwindled a fair amount since playing the more finely tuned and in-depth masterpiece that is Dark Souls.

Well, the games you listed don't really narrow down the choices ... Judging by them you like both turn-based and action, third and first person, old and new, western and japanese, funny and serious, D&D and shooter etc. Not much left in the RPG genre that can be excluded right from the start, apart from the fact that you didn't list any Diablo- or Rogue-likes and no tile-based dungeon crawler ... :D

You might want to check the Divinity series (Divine Divinity / Divinity 2, Beyond Divinity not so much). Divine Divinity is very open, with a decent story and more often than not several ways to solve a quest. Divinity 2 is more linear, but you can turn into a dragon and roast things, which is always a plus in my book ;)

Also, you have listed TES, so any of the newer stuff from Bethesda - Fallout 3/Fallout NV, Skyrim?

Some great suggestions so far, have you tried Divinity II: Developer's Cut? It's a mixture of open world and linear, has great loot, it supports multiple classes/builds, the art direction is great, the dialogue is actually really good and it's got some humor. It can be exceedingly difficult at times and it pretty much requires you to find and do sidequests in order to keep up level wise, I made the mistake of not seriously going after side quests and ended up having to restart the game. Overall it is a great game if you can deal with random difficulty spikes.

Vampire The Masquerade: Bloodlines is a game I'll recommend to anybody and everybody who will listen. It has perhaps the best dialogue of any game ever, there are several different playstyles to use, each vampire clan is different and unique, the characters are memorable and that's aided by the excellent voice acting The last few missions aside, you can complete most of the missions in more than one way, and many (if not most) of the missions have more than one possible outcome based on your decisions. The setting, general writing and main story itself is great, one particular subplot is better than the main story in most games in my opinion. Oh, and you can get into an argument with a stop sign.

Feel a bit spoilt for choice now lol

Resonance of Fate on PS3 or Gothic 2 on PC.

If you want a shorter one, you have to be more precise about what kind of RPG you're most in the mood for right now.

Ok, something fantasy based with a Medieval/Baldur's Gate feel to it would be nice

I'll put in another vote for the Gothic series (1, 2, and 3 are all good choices, along with Risen). Since you like the TES series I'd also recommend checking out Nehrim, a total conversion for Oblivion that's basically a AAA quality game in its own right. Divinity 2 and Drakensang: The River of Time are also good ones you may want to check out.

Gothic 3 has a large desert area (Varant), a large forest area (Myrtana) and a large arctic area (Nordmar). You can freely roam in Gothic 3 and there is not a single loading screen once you're in the game unless you use have to reload. However perhaps due to that, Gothic 3 can lag and stutter at times, regardless of your graphics settings.
