Well at the time of writing this, GOG has a sale going on, but I can't seem to find many games that interest me. With that in mind, perhaps you fine folks could recommend me some games? (Please read the edits, thanks!)

Things that appeal to me:

Non-Realistic/Weird/Unique Art: I'm bored of the "ultra realistic" art style, and the "ye olde generic middle ages" art style. The art style can be brightly colored and eccentric like Giana Sisters: Twisted Dreams, or moody like The Cat Lady, or anything in between as long as it's not "ultra realistic" or "ye olde generic middle ages".

Dialogue (choices) that matter: If the game has dialogue choices, I'd like for each different option to have a different reaction.

Create a character/customize a character: I enjoy being able to create a character, or at least being able to customize the character, even if it's just basic vanity customization.

Loot that makes sense: At the least, I would hopefully be able to find useful items in a highly guarded chest, rather than a candlestick and three gold coins.

Controls in real time: Nothing against turn based games, but I mostly prefer games that are in real time.

Open world/Non-linear story: self explanatory.

Bonus points if the game includes it's soundtrack.

Things that don't appeal to me (or I'm very picky about)

Vanity dialogue choices: If I have four dialogue choices but they all end with the same outcome, what's the point (besides role playing)?

Overly gimmicky games: I guess this mostly applies to some of the newer games/indie games, but games that rely entirely on a gimmick tend to seem boring/uninteresting to me (unless the gimmick is absolutely great obviously).

Thanks for reading and hopefully recommending me some games!

Edit: You can recommend games that don't exactly match up to my listed interests/disinterests, I just listed those ideas to help you understand what sort of game(s) I'm hoping to find. Thanks!

Edit: I own Planescape: Torment and Arcanum: Of Steamworks & Magicka Obscura

Reading your "guidelines" only three games come to my mind (If I processed everything correctly) :
American McGee's Alice
Alice: Madness Returns
DeathSpank
It's a bit old but I'd heartily recommend "Arcanum: Of Steamworks & Magick Obscura."

Both Alice: Madness Returns and American McGee's Alice are on my "to play" list actually, great recommendation! I've never heard of DeathSpank, it looks pretty interesting.

Thanks for the recommendations.

I own Arcanum: Of Steam & Magick Obscura already (Troika Games' games are worth buying for their dialogue alone, in my opinion).

Thanks for the recommendation!

Not many games on GOG that would fit all these criteria at once, possibly not even one, but Arcanum was the first that came to mind for me, too. The graphics aren't that unique and weird, but the setting is, character creation is more than just basic "vanity", the world is big and allows free exploration, dialogues partly reflect your character's personality and looks (e.g. if your intelligence is low, it will show in an amusing way, and people will judge you based on your gender, race, clothing etc.).

Well, actually, the first game I thought of was Jade Empire, but then you required an open world (it's rather linear), choices that matter (they are just Bioware's usual black and white choices at best) and free character customization (you can customize their stats but only choose between predefined looks)... It's still a great game, IMO, that would fit several of your other criteria, and the real-time combat is more fun than that of Arcanum.

And I don't know if you've played Planescape: Torment, if not, you might want to check it out, too. It probably sins against your loot rule, and even though it's real-time, the combat is not that good, and the story, while less linear than Jade Empire's is not really open either; and last but not least, your character is predefined (but you can customize his stats). It does fit the weird/uniwue setting, the dialogue choices and bonus points for a great soundtrack.

EDIT: Whoops, ninja'd by AFNord while I was still editing my post. And I overlooked what you said about Arcanum, too. D'oh! Seems like you already have the best titles in your collection. If you haven't played through them yet, you can save your money. ;)

Planescape Torment?
Hardly ultra-realistic graphics
Dialogue choices that matter (both short & long-term)
Character customization
Loot that makes sense
Realtime (but you can pause the game)
Not really an open world, but not really linear either. Somewhere in between. It has a natural story progression, but it opens up new areas with new & interesting side-quests and characters as you play.
Soundtrack included

Leroux: Well, actually, the first game I thought of was Jade Empire
Just wanted to second this recommendation. Jade Empire is a great and pretty unique game. It feels like Knights of the Old Republic with Bruce Lee as main character, set in the world of an artist on hallucinogenic drugs oO
Look for 'Darkseed' but it's not on GOG. Good point and click adventure with some really good art work.
I can't think of a game that has all of the attributes you've listed but Psychonauts has a brilliantly weird world to explore.

Here are a few more suggestions:

Don't Starve - for the atmosphere and art style
Planescape Torment - for the strange setting and the meaningful dialogue choices
Giants Citizen Kabuto - for it's alien setting (it's very funny too ;))
Just the other day GOG was giving away the three (original) Fallouts. I suggest you go through them.

1 and 2 are spectacular games! I got an extra copy, so if interested I can give it to you.
I will check out Jade Empire, thanks for the recommendations! (I would quote everybody who mentioned Jade Empire but I'm still learning my way around this forum).

I did add an edit to the original post and I'll repeat it here just to be clear: your recommendations do not have to fit all of the listed criteria, those were very loose ideas just to give you an idea of what sort of games I'm looking for.
Definitely Planescape Torment. Great music, great atmosphere and an ultra weird world. Also contains the best dialogue I have ever seen in a game.
If you like Star Wars at all, then I can verrry highly recommend KOTOR 1, although that is on steam and not gog.

edit: and of course Fallout which till this day remains the best RPG I have ever played.

Not a recommendation, since I don't know anything about it, but has anyone played Knock-Knock? That one looks kind of unique and intriguing, too, but I have no idea what kind of game to expect ...
