I do not aim to make a negative critic of OP's inquiry, but when people make those kind of thread, I think they do not stress enough how important is the graphical aspect of a game in their opinion.
For instance the first thing you said was about graphics, and the two extremes you quoted are the cat lady and Gianna sisters which are extremely well crafted visually. That paired with the "I can't seem to find many games that interest me" drive me to beleive you fancy shiny things, which is perfectly fine, but in order to help us helping you, I think the visual requirements of what you are asking for should be really accurate.

.... because I like good looking games a lot, but my prefered ones can't be considered as such on a modern scale.

I would recommend you to give a try to Sacrifice. An experience like no other, which seems to meet most of your requirements. It is somewhat linear though, in its own way, and it's more of an hybrid RTS so there is no chests or loot per se (because by "chest and loot" I suppose you didn't encompass "looting souls out of your ennemies' chests").

Edits : yeah I edited my post 5 times in a row or so .... that happens.

You can also try Downfall from the Cat Lady's author. It has some technical shortcomings, but that's the game that made me a Harvester Games fan :)

Well to be honest, while I did mention graphics first, I'm not too focused on the graphics quality, (as I stated) I'm just really bored of the generic "ye olde middle ages" grey and grey art style (or the "grey and grey industrial corridors/complex art style).

I should mention that I'm making the distinction between 'art style" and "graphics quality". To me, a game like Morrowind has aged poorly in terms of "actual graphics quality' but the art style is beautiful, and that's what is important to me in terms of visuals. I'm completely open to almost any art style, just as long as it's not another "generic ye olde middle ages/grey and grey industrial corridors/complex) art style. Of course in the end, the gameplay is MUCH more important than graphics, and in terms of actual gameplay, I think most of the games here at Good Old Games are here for a reason, and that's why I didn't really mention it in my original post.

Thanks for the recommendation, I've been looking at Sacrifice, it does seem intriguing.

I think he wanted something good looking, but not as realistic as, let's say, Call of Duty, Assassin Creed, Remember Me and such. Which is fine, by me. A game looking good, it's an added bonus, if everything else is top-notch.

The art style can be brightly colored and eccentric like Giana Sisters: Twisted Dreams, or moody like The Cat Lady, or anything in between as long as it's not "ultra realistic" or "ye olde generic middle ages".

Dialogue (choices) that matter: If the game has dialogue choices, I'd like for each different option to have a different reaction.

Create a character/customize a character: I enjoy being able to create a character, or at least being able to customize the character, even if it's just basic vanity customization.

Loot that makes sense: At the least, I would hopefully be able to find useful items in a highly guarded chest, rather than a candlestick and three gold coins.

Controls in real time: Nothing against turn based games, but I mostly prefer games that are in real time.

Open world/Non-linear story: self explanatory.

Bonus points if the game includes it's soundtrack.
Divine Divinity comes to mind as something you might enjoy. The graphics are fairly standard fantasy admittedly, but it really is a well-made RPG with a sense of humor about itself (but it's not a bwa-ha-ha comedy).

Thanks for the suggestion! I actually just bought Divinity II: Director's Cut today (it was/is on sale for $4.99) and have been playing it. Seems like a fun game.
