Here is an odd one:
1848, set during the Hungarian Independence war. And it is by the way free.

Can anyone find a full game featuring a more obscure (to the rest of the world) war?

And for the hundred year war: Two thrones by Paradox. It is, much like Crown of the north, a more simplistic strategy game than most of their other entries (apart from the map & events, it is the same game. Note that Crown of the North was released as a children's game in Sweden under the title Svea Rike 3 (though it is more complex than most strategy games)).

As for WW1: How about this one
It is apparently a very complex game, hard to get into but from what I've heard quite rewarding once you get past the huge learning curve (as with all Ageod games, really)

Darkest Hour expands HoI2 into WW1 territory. I have not played it, but from what I've gathered you can either start just before WW1 and play through WW2, or play either one of those wars, in scenario form.

*edit* Or how about the Falkland war?

Try "Making History" for WWII, or Hearts of Iron III.

Check out www.matrixgames.com/

It is a company that specializes in disrupting strategy war games. There is a lot of the same old same old in there. But they do have a wider selection than most.

A for your list; Birth of America 2 has the French and Indian War in it. Shogun 2 is a great game about the Shogun period of Japan and there is a British Vs Zulu that I played about ten years ago. I see if I can dig it up.

Crassmaster: Oh, I'm already down with Matrix. :) And BoA 2 is a terrific game. I have Shogun 2, I just haven't played it yet.
I found the game I was thinking about it is called Zulu War! You can get it from an indie developer called Jeff Lapkoff Strategic Simulation Games They have some fantastic war games (really meat and potatoes war games, none of that fancy stuff with "graphics") They also have a game about the Alamo and Custer's last stand that I played a lot years ago.
