I had a quick tally of the votes up to page 5 and the Dreamcast is by far the most popular shortly followed by the Amiga and the SNES just behind.

Well, I might like a separate service for it, first. But I suppose it's not a huge deal if the site was organized well, which I would expect it to be. :)
1. Dreamcast (Soul Calibur, Sonic Adventure, Jet Grind Radio, Rez!!!!!...tons of good stuff...the great DC emulator nullDC just went open source, maybe that would help you)
2. N64 (Zelda, Ogre Battle 64, Sin & Punishment)
3. Genesis (classic RPGs like Phantasy Star, Shining Force II, action games like Ristar, Sonic, etc...Sega is doing this with its Classics PC series as you probably know! Might with DC titles in the future)

I would like to say "all of them", I'm glad for anything that expands the catalogue. However, choosing three, they'd probably be the Megadrive, Super Nintendo, and Nintendo 64, in no particular order of preference.
Don't own a wii but would still vote for ones NOT already on virtual console. Even though am convinced gog.com would provide better game selections for all. Have downloaded emulators for snes & genesis, so wouldn't be as thrilled for them.

While I loved the SNES and Nintendo 64 during my formative gaming years, the Dreamcast never got it's due, but thanks to it's loyal legions everyone is reminded of that every day. Arcade games turned to too many gimmicks, and since I don't have a force feedback Hydro Thunder cabinet in my house, I don't know how much fun it would be playing anything other than X-Men & The Simpson's Arcade Game. Meanwhile, I am reminded every day of my earliest memories of bit-mapped and pixelated goodness coming from the Commodore 64. In order of most wanted to least?
1. Commodore 64
2. Sega Dreamcast
3. Amiga (for the sole purpose of maybe finally getting a WING COMMANDER game from GOG).
